Fall Inspiration

Hello Friends!

 Welcome back to the Wellness Corner With Cassandra! 

I'm not sure about you friends; however, I am so happy fall is here!  My wool coats, scarves, and those cute fury boots can make their way back to the front of my closet.  It is the time of year where lattes, cocoas and other blazing hot drinks are well worth the 20 minute wait at my favorite local coffee shop. (Remember to support local small businesses!) I was born the first week of October, so the sentiment I share for fall has been rooted since birth!  Fall offers a break we need from the sweltering heat of summer and prepares us for all the fun that comes with the holiday season.

 

Fall Transitions

As we transition into fall, friends let us transition our hearts to the possibility of new and exciting things to come this holiday season.  I have chosen to ground myself in gratitude, love, and purpose. Appreciation does not mean that I will not be enjoying the fabulous holiday sales and clearance bins; however, it does mean that I will firmly ground my gift-giving, cooking, and traditions in purpose. 


In Love with Fall

So spread the love this fall season.  Fill your homes with brown, orange, and red decor.  Make yard chores fun with your family! Fall into the leaves, bake spiced pumpkin treats, and create new traditions with your family.  Staying optimistic, kind, and cheerful will lead you to absolute joy. Remember, keep gratefulness in your heart and find ways to volunteer in your community.  Many families have suffered tremendously from the year’s hardships. Giving to others is truly, the gift that keeps on giving. 


Try My Fall Favorite!


Pumpkin Pancakes

½ Cup Canned Pumpkin puree
1 Cup of flour
1 Cup of Milk
1 egg
2 tablespoons of melted butter  
1 teaspoon white sugar
1 teaspoon brown sugar
2 teaspoons baking powder
1 pinch of salt
1 teaspoon nutmeg
cinnamon

 

Grab a bowl and combine the brown and white sugar, flour, nutmeg, baking powder, and salt. Next, add the milk, eggs, butter, and pumpkin puree. Mix until the ingredients are wet and moist.  Do not over mix. Grab a skillet and spray the skillet with cooking spray. Turn the heat up to medium. When the skillet is nicely coated and warm, spoon about a ¼ cup of the mixture into the skillet in a circle. Wait until bubbles form on top of the pancake. Flip the pancake over and allow the pancake to brown on the other side, then remove from skillet and place to the side.  Repeat this step until all your batter is cooked. Place your cooked pancakes on top of a plate, sprinkle some cinnamon on top, and enjoy!
